My sister-in-law is currently on a dairy and soya
free diet, so I decided to come up with some dairy free tasty recipes. These
flapjacks taste so delicious, and don’t taste any differently to regular
flapjack! They’re quick and easy to make and perfect for everyone to enjoy.
Ingredients
150g Flora Dairy Free Spread
150g Soft Light Brown Sugar
2tsp Ground Ginger
1tsp Ground Cinnamon
5 tbsps Golden Syrup
150g Raisins/sultanas or other dried fruit (I used
cranberries and raisins)
300g Porridge Oats
Optional: cereal for added crunch (bran flakes,
corn flakes or granola)
Method
1. Preheat
oven to gas mark 5
2. Melt
the dairy free spread in a pan over a low heat
3. Add
the brown sugar and stir until the sugar has dissolved
4. Add
the ginger and cinnamon
5. Stir
in the golden syrup, until the mixture is combined.
6. Remove
the pan from the heat and stir in the porridge oats, you can add crumbled up cereal
to give your flapjacks added crunch
7. Add
any dried fruit that you like, I used Raising and cranberries.
8. Once
the mixture is completely combined, pour in to a baking tray/dish and bake for
20-25 minutes or until turning golden brown
Top
tip: you may be tempted to put your flapjacks back in
to the oven because the mixture doesn’t look completely set and may jiggle
slightly. Don’t! Your flapjacks will harden as they cool.
