Chocolate Truffles

I love these chocolate truffles, they’re the perfect nibbles for any party, or to keep in the fridge and eat while watching TV. They’re so simple to make but are so yummy! They would also make the cutest gift for any chocoholic.

What You Will Need
Baking Tray
Baking Parchment
Lots of time

Ingredients
227g clotted cream
300g milk chocolate
300g white chocolate
150g hazelnuts

Method
1.      Heat up the clotted cream in a pan over a very low hob until it has completed melted (do not boil!)
2.      Add the milk chocolate until the chocolate has completely melted
3.      Once the pan has cooled down, put in to the refrigerator for 3 hours
4.      Remove the pan from the fridge, scoop out spoonfuls of the mixture and roll in to balls using your hands (about 3cm wide). Put these balls on to a tray lined with baking parchment. Try to do this as quickly as possible to avoid the mixture from heating up (this makes it harder to roll).
5.      Put the tray of truffles in to the fridge and leave for at least an hour, or preferably over night
6.      To coat and decorate your truffles, melt the white chocolate over a bain-marie and leave to cool slightly (approx 3 minutes).
7.      Coat the truffles in the melted chocolate and place on to a fresh sheet of baking parchment. While the chocolate is still wet, sprinkle over crushed hazelnuts (or sprinkle with cocoa powder if you aren’t a nut lover).
8.      Put the tray of truffles back in to the fridge for at least 30 mins for the chocolate to set.

The truffles can be eaten straight from the fridge or at room temperature. Any leftovers can be kept in an air tight container to eat when you need a chocolate fix.
